Chocolate-Covered Cashews with Coconut + Sea Salt

Who doesn't love a sweet treat in the summer that requires no baking and basically no effort? We do! 🙌🏻

This treat checks all the boxes:

  • Quick to make

  • Minimal ingredients

  • No weird stuff

  • Delivers when your sweet tooth comes knocking

Ingredients:

  • Whole, roasted & unsalted cashews

  • 1/3-1/4 cup HU chocolate chips

  • Unsweetened coconut flakes

  • Sea salt

Instructions:

  1. Toss your desired amount of cashews into a small mixing bowl

  2. Melt your HU chocolate chips—double boiler or microwave works

  3. Pour melted chocolate over the cashews and stir until they’re fully coated

  4. Add a few pinches of unsweetened coconut flakes and mix again

  5. Line a plate or tray with parchment paper

  6. Spread the cashews out in a single(ish) layer

  7. Sprinkle with a little more coconut (mainly for looks 😉)

  8. Finish with a dash of sea salt

  9. Chill in the fridge or freezer until set—about 10 minutes
